Already as a child and as a cook, Edwin Griessen observed many wild animals during the summers at the Stierenseeberg. In 2012 he was able to accompany a local hunter on the chamois hunt and was impressed by how respectfully he moved in nature. From this bond grew the game cuisine of the house.
Edwin gladly spends his free time with his family at the nearby Fromatt alp. The work on the alp, the animals in the mountains and watching game are his time to recharge. From this came many game dishes that are on the menu at the Hotel Kernen today.
